Danielle Brown from healthygirlkitchen always inspired us to cook healthy meals, but this time we are all about her Chocolate Chip Pumpkin Bread. Keep reading for full recipe and method.
What you will need:
1 15 oz can pumpkin purée
1/4 cup vegan yogurt
1/4 cup oil (macadamia or melted coconut oil)
2 flax eggs
1 cup coconut sugar
1 cup almond flour
3/4 cup all purpose gf flour
1 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp baking powder
1 tsp baking soda
1/3 cup mini chocolate chips
Method:
1. Preheat oven to 350 F (180 Celsius) and line a loaf pan with parchment paper.
2. Make flax eggs by combining 2 tbsp flax and 5 tbsp water. Set aside.
3. Add wet ingredients + sugar in a bowl. Mix.
4. Add the rest of the dry ingredients mix.
5. Pour into loaf pan and top with chocolate chips.
6. Bake for 45-55 minutes or until a toothpick comes out clean.
7. Let it cool for 30 min then cut and enjoy!
