Healthy Sushi recipe - perfect summer snack

This fresh and easy to create sushi roll is the ultimate summer snack.

Try it out yourself and let us know your thoughts, it is light fresh and delicious.





What you will need:


  • 1 Cucumber for the main sushi sheet - long strips

  • 1 Sliced cucumber - for sushi filling

  • Smoked Salmon

  • Cream cheese

  • Sliced Avocado

  • Black sesame seeds for topping








Method:

  1. Start by simply slicing 1 cumber in long strips - you can use a vegetable peeler to do this.

  2. Lay each slice of cucumber next to one another overlapping them slightly to create a flat cucumber sheet - this is the replacement of the traditional sushi paper.

  3. Spread cream cheese to the cucumbers

  4. Place your smoked salmon pieces onto the cream cheese

  5. Layer the sliced avocados and sliced cucumbers onto of the salmon

  6. Gently start to roll the cucumber sheet

  7. Slice the roll evenly and sprinkle some Black sesame seeds onto each slice
